Cheesy Portabella Pizzas (serves 3)
1/2 cups Fage 0% Fat Plain Greek Yogurt
1 teaspoons Garlic Powder
1 teaspoons Oregano
1 cups Tomato Sauce
4 tablespoons Parmesan Cheese
4 oz Cabot Sharp Extra Light Cheddar Cheese
1 cups Mozzarella Cheese, Shredded, Reduced Fat
6 piece Mushroom, Portabella, Raw
Heat oven to 400* lay out a sheet of tin foil in a pan with sides (so juices don’t leak) then spread olive oil around on the tin foil (just enough so the caps don’t stick)
Spoon about 2 Tbsp tomato sauce into each cap., mix greek yogurt, Mozzarella cheese, parmesan, and spices all together. then fill each mushroom evenly with cheese mixture. Sprinkle cheddar cheese evenly on top of each mushroom.
Bake 25 minutes until cheese is melty.
2 mushrooms per serving.
